2007 Indomitable
"Strength does not come from physical capacity.
It comes from an indomitable will."
-Mahatma Gandhi-
The 2007 Indomitable represents the best of the best! The blend for our flagship wine is made from only the best barrels (and in 2007 we had a lot of amazing barrels to choose from). 2007 was also one of the best vintages Washington has seen, giving this release the most complexity of any prior vintage.
The nose starts with appealing notes of crème’ de cassis, black fruits, and baking spices. The palate shows fruit galore with wonderful supple tannins, wrapped around a core of black fruits. It has amazing depth, and a polished mouth-feel revealing cola tones, black cherry and plum. This wine will peak in 3–5 years but is poised to mature nicely in the cellar, giving a decade or more of pleasure. 56% Cabernet Sauvignon, 22% Merlot, 11% Cabernet Franc, 11% Malbec.
